Hojicha powder, an excellent alternative for matcha
Hojicha powder is made from finely ground roasted green tea leaves, this younger sister of matcha green tea is becoming increasingly popular in Japan and beyond. Its delicious nutty taste makes it very accessible to everyone and lends itself perfectly to a range of applications.
Like Sencha, tea leaves for Houjicha are grown with fully-flooded sunlight, so that Houjicha contains beneficial Catechin (a wellknow antioxidant).
The first three processing steps of Houjicha tea leaves are the same as for Sencha: 1) Steaming, 2) Drying and Crumpling, and 3) Shaping.
But to make Houjicha powder, the tea goes through one special additional steps: 4) Roasting and 5) Powdering.
Flavor
The taste is similar to the regular hojicha, a very pleasant tea with its characteristic delicious taste and a light brown color.
Because Hojicha is roasted, it contains very little caffeine, so the taste is not bitter or astringent, but rather aromatic and nutty with a soft aftertaste.
Powdered hojicha can be whipped in hot or cold water or milk, just like matcha but with a milder taste.
It is a versatile culinary ingredient in a multitude of recipes, such as hojicha latte, in patiserie, in smoothies...
